Tasting - Dibon Cava

Vintage Cellar Review: 
The nose offers regal yeast and richness, while the palate has complexity to prop up apple, citrus and grapefruit flavors. Solid from front to back, with health and freshness.

My Review: On the first sniff, this wine served up the promised citrus flavors. It smelled very light and crisp, but did not taste as fruity as the scent led me to expect. When the wine hit my tongue, the only thing I tasted was a bite of apple. While delicious on its own, the sharp, lingering apple note was overwhelming paired with the tingling from the bubbles. If this hadn't been a sparkling wine, the acidity probably would have been balanced out; instead, the fizzy-quality only made the combination of citrus flavor and acidity more pronounced.
